Just a clarification on Matrix and aux in - aux out

Coming from the old analogue days, Aux In 1 was directly related to Aux Out 1.

Am I correct that today Ins and Outs are completely independent?

Is the output for Matrix simply an aux out? Can't find anywhere that states SPECIFICALLY.

Yes that is correct. The physical connections are separate from the internal processing, including channel strips, mixbuses, matrix, etc.

A matrix is simply a mixbus of mixbuses (including the Main LR and Mono M/C). It is an internal process that can be assigned to any physical outputs, just like the mixbuses and Main LC.
